Harissa with Olive Oil

Ingredients:

  • 200g dried red chili peppers
  • 4 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp coriander seeds
  • 1 tsp caraway seeds
  • 3 tbsp olive oil
  • 1 tbsp lemon juice

Instructions:

  1. Soak the dried chilies in warm water for 30 minutes. Drain and remove stems and seeds.
  2. Grind the coriander and caraway seeds into a fine powder.
  3. Blend the chilies, garlic, salt, and spices into a smooth paste.
  4. Gradually add olive oil and lemon juice while blending.
  5. Store in a jar and drizzle with extra olive oil for preservation.

Tunisian Shakshuka with Olive Oil

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 3 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 eggs
  • Fresh parsley for garnish

Instructions:

Garnish with parsley and serve with bread.

Heat olive oil in a pan over medium heat.

Sauté the onion and bell pepper until soft.

Add tomatoes, garlic, and spices. Simmer for 10 minutes until thickened.

Make small wells in the sauce and crack the eggs into them.

Cover and cook until eggs are set.
