Tunisian Kafteji with Olive Oil
Ingredients:
- 2 potatoes, diced
- 1 zucchini, diced
- 2 bell peppers, diced
- 2 tomatoes, chopped
- 2 eggs
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
Instructions:
- Heat olive oil in a pan and fry the potatoes until golden. Remove and set aside.
- Fry the zucchini and bell peppers separately until soft.
- Cook the tomatoes in the same pan until thickened.
- Fry the eggs and chop them into small pieces.
- Mix all the ingredients, season with salt, pepper, and cumin.
- Serve warm with extra olive oil on top.
