Tunisian Kafteji with Olive Oil

Ingredients:

  • 2 potatoes, diced
  • 1 zucchini, diced
  • 2 bell peppers, diced
  • 2 tomatoes, chopped
  • 2 eggs
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin

Instructions:

  1. Heat olive oil in a pan and fry the potatoes until golden. Remove and set aside.
  2. Fry the zucchini and bell peppers separately until soft.
  3. Cook the tomatoes in the same pan until thickened.
  4. Fry the eggs and chop them into small pieces.
  5. Mix all the ingredients, season with salt, pepper, and cumin.
  6. Serve warm with extra olive oil on top.
