Tunisian Shakshuka with Olive Oil

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 3 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 eggs
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a pan over medium heat.
  2. Sauté the onion and bell pepper until soft.
  3. Add tomatoes, garlic, and spices. Simmer for 10 minutes until thickened.
  4. Make small wells in the sauce and crack the eggs into them.
  5. Cover and cook until eggs are set.
  6. Garnish with parsley and serve with bread.
