Tunisian Shakshuka with Olive Oil
Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, diced
- 3 tomatoes, chopped
- 2 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 eggs
- Fresh parsley for garnish
Instructions:
- Heat olive oil in a pan over medium heat.
- Sauté the onion and bell pepper until soft.
- Add tomatoes, garlic, and spices. Simmer for 10 minutes until thickened.
- Make small wells in the sauce and crack the eggs into them.
- Cover and cook until eggs are set.
- Garnish with parsley and serve with bread.
