Vegetable Couscous with Meat and Olive Oil
Ingredients:
- 250g couscous
- 300g lamb or beef, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 1 zucchini, chopped
- 1 potato, chopped
- 2 tomatoes, blended
- 1 tsp salt
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 500ml water
Instructions:
- Heat olive oil in a pot and brown the meat.
- Add onion and sauté until soft.
- Stir in tomatoes and spices, then add water. Simmer for 30 minutes.
- Add the vegetables and cook for another 20 minutes.
- Steam the couscous and fluff with a fork.
- Serve the couscous with the meat and vegetables on top.
