Vegetable Couscous with Meat and Olive Oil

Ingredients:

  • 250g couscous
  • 300g lamb or beef, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 zucchini, chopped
  • 1 potato, chopped
  • 2 tomatoes, blended
  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 500ml water

Instructions:

  1. Heat olive oil in a pot and brown the meat.
  2. Add onion and sauté until soft.
  3. Stir in tomatoes and spices, then add water. Simmer for 30 minutes.
  4. Add the vegetables and cook for another 20 minutes.
  5. Steam the couscous and fluff with a fork.
  6. Serve the couscous with the meat and vegetables on top.
